New Autumn Menu in The Montagu
Autumn is the season of "mists and mellow fruitfulness" when classic fruit and vegetables are ready for harvest, and game comes into season. The Montagu’s chef de cuisine, Carlos Teixeira, has created a new autumn menu highlighting the wonderfully rich flavours that this warming food has to offer.
Each of the starters, showcases the ingredients and flavours associated with this season, including Pan-Seared Celtic Scallops, with Wild Mushrooms, Grilled Baby Leeks and Pomegranate Syrup, along with such warming dishes as Smoked Gresshingham Duck Breast, with Warm Bramley Apple and Raisin Compôte, and Seafood Bisque. Flavoursome game ingredients are evident in the main courses, which include: Whole Roast Grouse with Bacon, Sautéed Green Beans, Braised Shallots and Bread Sauce; and Red Wine-Marinated Venison with Sweet Potato Pavé and Redcurrant Jus. Fish-lovers will enjoy such dishes as Pan-Fried John Dory with Bacon and Pommery Mustard Savoy Cabbage, Glazed Carrots and Sherry Reduction; and Pan-Roasted Turbot with Lemon Saffron Potatoes and Sautéed Spinach.
Those with a sweet tooth, will not be disappointed by our desserts: Apple and Blackberry Tart with Vanilla Sorbet and Dark Chocolate Fondant with Raspberry Ice-Cream, and not forgetting the favourite Sticky Toffee and Date Pudding with Toffee Sauce and Cornish Vanilla Ice-Cream!
